The evolution of the unique vanillylamine synthase enzyme (pAMT) in chili peppers, responsible for the synthesis of pungent capsaicinoids, involved duplication of a chloroplastic GABA-T ancestor, loss of the plastid transit signal, and specific translocation during Capsicum divergence, as well as increased catalytic efficiency and transcriptional changes.
